I’ve been eating breakfast burritos my whole life. Even as a little girl, my mom would scramble some eggs and stuff them into a warm flour tortilla. This was long before breakfast burritos were trendy and on most restaurant menus. So I carried on the tradition and made them for my kids. These days my breakfast burrito recipe has a few more ingredients, but they are still simple and easy and work any day of the week.
My breakfast burrito recipe starts with large flour tortillas, filled with fluffy scrambled eggs, topped with sharp cheddar cheese, ripe avocado, and a little hot sauce. I know there are a ton of great recipes out there with a variety of breakfast burrito filling options, so add what you like, and feel free to have fun.
Here’s what you need to make homemade breakfast burritos:
Eggs: 2 large eggs, preferably organic if you can afford it. (The cost of eggs right now is high!). You will need to scramble the eggs.
Avocado: 1/4- 1/2 ripe avocado. Smashed and seasoned with salt and pepper.
Cheese: Any cheese will work. You need 1/4 cup of grated cheese. Try sharp cheddar, Monterey jack, pepper jack, or American.
Tortilla: 1 large “burrito size” flour tortilla
Optional Fillings to try: Breakfast sausage, crispy bacon, tater tots, breakfast potatoes, crispy hash browns, bell pepper, green chiles, or jalapenos for an added kick
Optional on the side: Fresh pico de Gallo, green salsa, or sour cream
Here’s how to make the best breakfast burrito recipe:
Cook the eggs
Start with scrambled eggs. I have an entire blog post on how to make scrambled eggs so if you are interested click here! Otherwise, you will add 2 large eggs to a small bowl with heavy cream or milk. Use a fork to gently whisk together. I like to season the egg mixture with salt and black pepper before adding it to the pan. Next, warm up a large skillet, preferably a nonstick skillet over medium heat. Once the pan is warm add one tbsp of butter let it melt and then swirl it around in the pan. Carefully pour in the eggs and use a rubber spatula to gently push the eggs from the edge of the pan to the center. Continue to do this as the eggs set up and become more firm. For the best results cook the eggs over low or medium low heat. “Low and slow” is the best way to cook scrambled eggs.
Warm the tortilla
After the eggs are cooked, be sure to move the pan off of the burner because the residual heat will continue to cook the eggs. At this point, you can top the eggs with your grated cheese. This will allow the cheese to soften and give you that melty cheese inside the burrito. Next, you need to heat the tortilla. I like to do it directly on the stovetop, but you could also do it in a hot skillet. Place the tortilla directly on the burner first, then turn on the flame to medium-high heat. Once the tortilla starts to blister and char use tongs to flip over and cook the other side. You want the tortilla to soften and get a few black spots.
Fill the burrito
Lay the tortilla on a flat work surface, like a cutting board or countertop. Add the smashed avocado spreading it out and leaving the edges clear. Add the eggs to the top of the avocado. Top with hot sauce or salsa, maybe a dollop of sour cream, and then close it up.
Fold up the tortilla
Fold each end of the tortilla up and then roll the tortilla until it is closed. Serve the burrito with fresh fruit on the side or some breakfast potatoes. If you are in a rush, wrap the burrito in aluminum foil and take it to go.
Variations
The great thing about breakfast burritos is there are so many varieties to try. If you are looking for a vegetarian breakfast burrito, keep it just like it is, but otherwise, you could add some cooked bacon or sausage to up the protein. My daughter loves hash browns inside, so when I have time I just grab the premade hash brown patties and cook one of them first before I start prepping the eggs. You could also add black beans or substitute guacamole for the avocado. It’s entirely up to you. Your ultimate breakfast burrito awaits!

Breakfast Burrito
A soft flour tortilla filled with eggs, avocado and cheddar cheese, this breakfast burrito is sure to satisfy all your cravings.
Ingredients
- 2 scrambled eggs
- 1/4 avocado, smashed with salt and pepper
- 1/4 cup grated cheese (cheddar, mozzarella, Monterey Jack)
- 1 large (burrito size) flour tortilla
- *Optional* Hot sauce or Salsa
- *Optional* Sour cream
- *Optional* 6 Tater tots or breakfast potatoes
- *Optional* 1-2 slices of cooked bacon or breakfast sausage can be added (for added protein)
Instructions
- Warm a flour tortilla on the stove top until it gets blistery and brown in spots, flip over and repeat on the other side.
- Lay tortilla on a flat surface and add smashed avocado. Spread around leaving the edges clear.
- Top avocado with scrambled eggs.
- Top eggs with cheese. (this can also be done in the pan)
- Add hot sauce, salsa, or sour cream
- Fold tortilla in on two ends, then begin to roll the tortilla until it’s closed.
- Enjoy!
Notes
- This recipe is for one breakfast burrito, but you can easily double, triple or quadruple the recipe for more. Feel free to add anything you want to make this your favorite breakfast burrito. I've kept it simple, but it should still meet meal plan requirements.
- Guacamole can be used in place of the avocado. You can find small individual snack size containers in many grocery stores including Trader Joe’s.
- Optional add-ins: for Fat add sour cream, for starch add tater tots, hash browns, or breakfast potatoes, and for protein add bacon or breakfast sausage.
