
Some nights, I just need dinner to be easy, and this Italian Sausage Sheet Pan Dinner always comes to my rescue! Everything cooks together in one pan, so cleanup is a breeze, and the flavor is incredible. The combo of roasted potatoes, sweet peppers, and juicy sausage makes the whole house smell amazing, and my family never complains when this hits the table. Plus, you can mix it up with whatever sausage or veggies you have on hand, which makes it one of my favorite no-fuss dinners. My family likes mustard as a condiment, so I put out all the varieties you can imagine. Classic yellow, spicy golden, and Dijon mustard. It may not be the classic sausage and peppers, but it still delivers that same comforting, homemade vibe.
Ingredients for Italian Sausage Sheet Pan Dinner:

Italian Sausage-
2 packs of Italian Sausage, any variety. Sweet, Hot, or Mild. You can mix up the kind of sausage you use. Pork, chicken, or turkey sausage will work. Even the pre-cooked sausage is ok to use. I like to mix it up and use a couple of different kinds. Some people in my family like it spicy, and others prefer the milder flavor of chicken Italian sausage. Whatever you like, you should make!
Bell Peppers-
1-2 Bell Peppers, sliced into strips. Keep the slices on the wider side; otherwise, if they are cut too thin, they won’t survive an hour in the oven. One pepper can be enough if it’s on the larger side. If you like red and green or red and yellow, buy peppers on the smaller side so there is enough room in the pan.
Onion-
1/2 of a large onion, or one whole medium onion, sliced into thick strips. I like to use a sweet onion, but a yellow or red onion is also okay.
Baby Potatoes-
Small bag of Baby Gold Potatoes, quartered. You can also use baby red potatoes. If you only have larger potatoes that’s ok, just cut them up into smaller pieces. Portion out per person to see how much you will need. I usually do about 4 baby potatoes per person.
Sweet Potato-
1 Sweet Potato, quartered. Sweet potatoes are not for everyone; in fact, my whole family dislikes them, so I only add a very small one to this sheet pan. You can totally leave it out.
Seasoning and Oil-
- Garlic Powder-1 teaspoon of garlic powder
- Italian Seasoning- 1 teaspoon of Italian seasoning
- Kosher Salt- 1 teaspoon of salt
- Black Pepper- 1/2 teaspoon of black pepper
- Olive oil- 1/4 cup of olive oil
Step-by-Step Instructions
Step 1: Preheat the oven
Preheat your oven to 425°F (220°C) so it’s nice and hot when you are ready to bake.
Step 2: Par-cook the potatoes
Place your quartered baby potatoes, red potatoes, or sweet potatoes in a large bowl. Cover with very hot water and let them soak for about 15 minutes. As a result, this helps them cook evenly and get that perfect crispy edge.

Step 3: Prep the veggies
While the potatoes are soaking, slice your bell peppers and onion into strips. You can use any color of peppers or onions you like.

Step 4: Drain and dry the potatoes.
Drain the potatoes and spread them onto a clean dish towel or paper towels. Gently pat them dry. This step is important for crispy potatoes. Wipe out the bowl to remove any excess water.

Step 5: Season everything
After the potatoes are dried, return them to the bowl, then add the sliced peppers and onions. Drizzle with olive oil and sprinkle in the garlic powder, Italian seasoning, salt, and black pepper. Toss well to coat everything evenly.

Step 6: Spread onto a baking sheet
Pour the seasoned veggies and potatoes onto a large baking sheet, spreading them out in an even layer.

Step 7: Add the sausage
Place the Italian sausage links right on top of the veggies. Use sweet, mild, hot, or even turkey sausage, whatever your family loves most

Step 8: Bake
Bake for about 1 hour, turning the sausages halfway through for even browning. For extra crispiness, broil for 2-3 minutes at the end.
Step 9: Finish and serve
It’s ready to eat right out of the oven. Additionally, you can sprinkle with parmesan cheese, fresh Italian parsley, or a pinch of red pepper flakes before serving. Serve with a variety of mustards on the side. (Classic yellow, spicy brown, or Dijon) Enjoy your delicious, no-fuss sheet pan dinner!

Italian Sausage Sheet Pan Dinner
This Italian Sausage Sheet Pan Dinner is an easy, one-pan meal loaded with juicy sausage, tender potatoes, and roasted veggies. Simple, flavorful, and perfect for busy nights!
Ingredients
- 2 packs of Italian Sausage, any variety (Sweet, Hot, Mild)
- 1-2 Bell Peppers, Sliced into strips (any variety)
- 1/2 Large Onion, sliced into strips (red or yellow)
- Small bag of Baby Potatoes, quartered (red or gold)
- 1 Sweet Potato, quartered (can be left out)
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp-1/4 cup Olive oil
Instructions
- Preheat oven to 425 degrees.
- Par-cook potatoes for about 15 minutes. Add cut potatoes to a large bowl or pot and soak in very hot water.
- While the potatoes are soaking, cut the onion and peppers.
- Drain potatoes and pat dry with a clean dish towel or paper towels. I do this by dumping them onto a clean dish towel and gently rubbing them. Dry the bowl to remove any excess water that may be left behind.
- Add the potatoes back into the bowl and add peppers, onions, spices, and oil.
- Pour everything onto a sheet pan
- Top with sausage
- Bake for 1 hour. Turn the sausage for even browning. Can broil at the end to brown everything if you want.
Notes
- You can mix up the kind of sausage you use. Pork, Chicken, or Turkey will work. Even the pre-cooked sausage is ok to use.
- The amount of veggies is up to you. If you love onions and want to add more, feel free. Not a fan of bell peppers, then cut back or omit. It’s really up to you!
- If the pan is really full, the veggies will not crisp up or brown as much; they tend to steam. That is still ok as long as they are tender and cooked. If you want really crisp potatoes, make sure that they are in a single layer and in contact with the pan and not piled on top of each other.
