Cucumber yogurt dip is very similar to the Greek dip, Tzatziki. The major difference is that in my recipe I do not grate the cucumber I leave it in small chunks. This dip is creamy, tangy, and delicious. It’s made with greek yogurt, lemon juice, garlic, and cucumbers. I love to use a dollop of it over my curried chickpeas. But it’s also great as a dip with crispy pita chips or any raw veggies.
Here’s how to make this cucumber yogurt dip:
First, finely mince four cloves of garlic. Second, dice the cucumbers into quarters. Next, add the plain Greek yogurt to a bowl along with the minced garlic and diced cucumbers. After that, add the juice of one lemon, salt, pepper and stir it all together. Be sure to give it a taste and adjust the seasoning if necessary. You might need to add a pinch of salt if it’s too sour/tangy. Now’s the time to add fresh mint or dill if you would like. Adding fresh herbs adds a freshness that is really tasty. This is totally optional but worth trying!
Don’t serve the dip right away!
This cucumber dip needs a little time to allow the flavors to marry and come together. It needs at least 30 minutes or so to sit. So leave it out or pop it in the fridge for a bit while you chop the veggies or prepare whatever you are serving it with. Then, after 30 minutes-enjoy!
Cucumber Yogurt Dip
Cucumber yogurt dip is creamy and delicious. Made with greek yogurt, lemon juice, garlic, and cucumbers. Use it as a dip for pita chips or veggies.
Ingredients
- 2 cups plain greek yogurt
- 4 garlic cloves, minced
- 1 cup cucumber, finely diced into small quarters (Persian or English cucumbers)
- 1 lemon, juiced
- 1/2 tsp salt
- 1/4 tsp black pepper
- *optional 2 tbsp fresh mint or dill, chopped
Instructions
- Add all ingredients to a bowl, stir to combine. Adjust seasoning as needed.
- Let sit for about 30 minutes to allow flavors to come together.
Notes
- I like to use small Persian cucumbers or English cucumbers in this dip. There are fewer seeds and the skin is not as tough. If you can only find regular cucumbers I would recommend peeling them first and removing the seeds.
- If using a regular cucumber here is how to remove the seeds. Peel the skin off first. Then, slice the cucumber in half length-wise. Using a spoon, drag it down the center of the cucumber where all the seeds are and gently remove the seeds. Now, cut each half in half again and then dice,
