Breakfast is my favorite meal of the day. So if I can eat pancakes and still feel like I put something good into my body I am a happy girl. These banana oatmeal pancakes are filled with some really good stuff, like oatmeal and bananas. The oatmeal adds fiber making them hearty and very filling while the banana adds nutrients like potassium and magnesium. The soft texture on the inside and the crispy edges on the outside keep me going back for seconds! Feel free to top these pancakes with whatever you want-sliced bananas and chopped walnuts would be delicious. I like them best topped with butter and drizzled with warm maple syrup.
Banana Oatmeal Pancakes
Adding oatmeal and banana gives these pancakes a healthy update. They are soft on the inside and have crispy edges. The oatmeal adds fiber making them hearty and very filling. Enjoy them topped with butter and warm maple syrup!
Ingredients
- 2 cups uncooked oats (Quick Style)
- 2 cups milk
- 1/2 cup flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1 1/2 tsp cinnamon
- 2 eggs, beaten
- 4 tbsp butter, melted and cooled slightly
- 1 tsp vanilla extract
- 1 very ripe banana, mashed (brown spots on the banana)
- Butter and Canola oil for cooking
Instructions
1. Combine uncooked oats and milk in a large mixing bowl. Stir, cover and put in refrigerator for about 30 minutes. This helps soften the oats before cooking.
2. Melt butter in the microwave or in a small pan on the stove top. Set aside too cool.
3. In another bowl combine flour, baking powder, baking soda, salt and cinnamon. Whisk to combine. Set aside.
3. In a small bowl lightly beat 2 eggs. Add mashed banana, vanilla and cooled melted butter. Mix again.
4. Remove oats from refrigerator and add egg mixture. Stir to combine.
5. Finally, add flour mixture to oat & egg mixture. Whisk to fully combine.
Time to cook!
Using a combination of about 1 tsp. butter and 1 tsp.canola oil coat a griddle pan or frying pan over medium to high heat.
Once pan is warm and butter has melted, using a 1/4 cup measuring cup pour batter onto pan. Cook until edges start to turn golden brown and bubbles start to form and pop. Flip over and cook for an additional 1-2 minutes. Time varies.
Serve immediately topped with butter and maple syrup.

Notes
Be sure to use "quick oats or instant oats". You need the oats to soften and break down a bit and if you use regular oats this will take much longer.
When picking a banana, grab one that has a lot of brown spots, the browner the better. It makes for a very sweet banana! If you are not feeling like banana pancakes, leave it out, they are delicious either way!
