Chocolate chip skillet cookie is a fun dessert that my family just loves. Now don’t get me wrong chocolate chip cookies are still a classic and should be made a few times a year, but this treat is much easier to make and is a fun dessert that everyone comes together to enjoy.
If you have never had a skillet chocolate chip cookie let me tell you about it. I first had one at a local restaurant Bj’s. They call it a “Pizookie” where pizza and cookies come together. Back in the ’90s when I first discovered this masterpiece they only served large ones that were big enough to share and I think they only had one kind. Today the restaurant has many varieties and even comes in small personal-size pans.
My version is made entirely in a 10-inch cast iron pan-no mixers or extra bowls needed and it’s definitely big enough to share! So read along as I tell you how to make this giant chocolate chip cookie!
Here’s what you need to make a chocolate chip skillet cookie:
Before I go over what you need to make this recipe it is important to mention that this is made in a cast iron pan. Ideally a 10-inch cast-iron skillet, but 12-inch will work too, however it won’t be as thick. If you don’t have a cast iron pan, that is ok you can use another 10-inch pan, just be sure it is oven safe up to 350 degrees.
All of the classic ingredients are needed for this giant cookie recipe. You need a stick of butter and an egg that is room temperature. White sugar, dark brown sugar, vanilla extract, all-purpose flour, baking soda, salt, and chocolate chips.
Any kind of chocolate chip works in the recipe it’s really up to you and your personal taste. I’m partial to milk chocolate, but my daughter loves semi-sweet chocolate chips and dark chocolate. You can do a combination of different chocolates and even add nuts if that is your thing.
You definitely want to pick up some vanilla ice cream and maybe even whipped cream as well. Why not! Even though this big chocolate chip cookie can stand alone and be delicious, everything is better with ice cream!
How to make this ooey-gooey skillet cookie:
Before you begin, it’s a good idea to grab all the ingredients you need for this recipe. Have everything ready and by the stovetop. Measure out both kinds of sugars, flour, and chocolate chips. This recipe is similar to classic chocolate chip cookie recipes where you combine the wet ingredients and then add the dry ingredients. The biggest difference is there is no large bowl, no mixing at low speed, and no baking sheets required.
Let’s begin!
To start, put the cast iron pan on the stovetop and warm up over medium heat. Then add the stick of butter. Once melted, add both sugars and vanilla extract to the melted butter. You need to stir this mixture until the sugar and butter combine and are relatively smooth. Then you will remove it from the heat and let it cool until just slightly warm to the touch. This takes about 5 minutes. We have to cool the mixture because we are adding an egg and if you add it to hot sugar the egg will scramble!
While the sugars are cooling crack an egg into a small bowl and lightly beat with a fork. (this is the only bowl needed). You could add the egg directly to the pan and beat it before stirring it into the sugar mixture, but I prefer using a bowl. Next, add the beaten egg to the cool sugars and stir with a fork until combined.
Add dry ingredients:
After that, carefully add the flour, baking soda, and salt. The flour can be messy so stir slowly. You can continue to use the fork or try a wooden spoon if that is easier. The flour mixture will be smooth just like regular cookie dough.
Now it’s time to add the chocolate chips or chocolate chunks. Stir them in until evenly distributed. Then be sure the mixture is spread in an even layer and reaches the edge of the pan.
Time to bake!
Bake for 15-20 minutes until slightly golden brown around the edges. It will still have a soft center and look undercooked, but it will continue to cook as it sits in the pan. So don’t overcook it. This has the consistency of chewy cookie dough. The crispy edge is more like a regular cookie. So there is a bite for everyone.
Serve warm with scoops of vanilla bean ice cream on top. Give everyone a fork and let them dig in family style! This is the perfect dessert for 4-8 people. Chocolate Chip Skillet Cookie
This chocolate chip skillet cookie is a fun dessert that comes together quickly using only a cast iron pan. Served with scoops of vanilla ice cream on top and then eaten right out of the pan warm.
Ingredients
- 1 stick of butter
- 1/2 cup white sugar
- 1/2 cup dark brown sugar (light is ok)
- 2 tsp vanilla extract
- 1 egg, room temperature, lightly beaten
- 1 1/2 cups all purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 3/4 cup milk chocolate chips (semi-sweet or dark chocolate is ok too)
- Vanilla ice cream
- Whipped cream
Instructions
Preheat oven to 350 degrees
1. Using 10 inch cast iron skillet, melt butter over medium-low heat.
2. Once butter is melted, add both sugars and vanilla stir to combine then remove from the heat. This needs to cool for about 5 minutes so that it is no longer hot, but warm to the touch. This is because we are adding an egg and if you add it to hot sugar the egg will scramble!
3. While that is cooling, lightly beat an egg in a small bowl.
4. Add the beaten egg to the cooled butter and sugar mixture and use a fork to stir to combine.
5. Carefully add flour, baking soda, and salt to the top of the mixture and using a fork mix together until everything is mixed and well combined. The mixture should be smooth.
6. Stir in chocolate chips until evenly distributed. Spreading the mixture until it’s in an even layer and reaches the edge of the pan.
7. Place into the oven and bake for 15-20 minutes until slightly golden brown around the edges (it will still look soft and undercooked in the center.)
8. Serve warm with scoops of vanilla ice cream on top. Give everyone a fork and let them dig in family style!
Notes
- Feel free to use any kind of chocolate chips you like. Semi-sweet, dark chocolate, white chocolate, or milk chocolate.
- If you do not have a cast iron pan use any 10-inch pan that is oven safe up to 350 degrees.
