Crispy kale chips have been a regular snack in our house since I learned how easy they are to make. In fact, they are so easy I feel kind of foolish making them an entire blog post, but so many people ask how to make them I decided it might make sense just to put the recipe up.
Love or hate kale?
I was not a huge fan of kale when it hit the scene as the most popular good for you green leafy vegetable a few years ago. In fact, I was a resister. I found kale to be tough and bitter and well quite frankly, gross! I decided to stick to the more common greens we all knew and loved, like spinach, romaine, and arugula.
It wasn’t until I went to one of my favorite restaurants here in Los Angeles, called Petty Cash and they added crispy kale to their cauliflower nachos. I thought, “nope“ what the heck are they thinking, but my friend insisted I would love it. She was SO right, and from that moment on I was converted. The kale was light, crispy and so, so delicious.
As time went on I would visit this restaurant just to get my fix of crispy kale. My kids soon discovered how good it was and convinced the restaurant to bring them just a side of the kale. Yes, it was that good!
How to get the crispy kale cooked perfectly:
Fast forward a couple of years and I decided to recreate the crispy kale. After several failed batches of burnt, soggy, or just not right kale I figured it out. Massage the kale first with olive oil and season with salt and pepper. Make sure to keep the oven temperature not too hot and not too low at 300 degrees. Stir halfway through and perfection is waiting for you at the end!
What you need to make crispy kale:
The recipe is so simple you need only a few ingredients. Basically, olive oil, salt, and pepper are the only things you really need. But I encourage you to play around with the seasoning. Everything bagel seasoning is great and then a few splashes of soy sauce take it to the next level. I love to grate fresh parmesan cheese over the crispy kale just before serving. I also like fresh lemon juice just before eating. Be warned, the lemon juice causes the kale to get soft so only squeeze the lemon juice when you’re ready to inhale the kale!

Crispy Kale Chips
Crispy kale chips are the perfect snack. Crunchy, salty, and delicious.
Ingredients
- 1 bunch of Dinosaur Kale, stems removed and torn into pieces.
- 1 Tablespoon Olive Oil
- 1/2 Tsp. Salt
- 1/4 Tsp. Pepper
Instructions
- Preheat oven to 300 degrees.
- Line a baking sheet with parchment paper.
- Spread kale out evenly onto a baking sheet.
- Add olive oil, salt & pepper.
- Massage kale so that each leaf is coated.
- Bake 35 minutes stirring 1/2 way through.
- Remove from oven. Serve.
*Optional*
-Squeeze lemon juice over the top for a tangy bite. Please note that lemon juice will soften the chips if not eaten right away.
-Sprinkle Parmesan cheese on top is delicious.
-Soy sauce is an option you must try.
Notes
If you decide to top the crispy kale with lemon juice or soy sauce please note that the kale will get soft pretty quickly, so be sure to eat it right away!
