Enchilada typically means a corn tortilla rolled around a savory mixture covered in chili sauce and baked. Enchiladas are delicious. I especially love them prepared with a classic creamy green sauce called ” enchilada suizas”. So I decided to create my own version of the classic dish.
In this recipe, I use a few simple ingredients like black beans, brown rice and canned enchiladas sauce. I take a short cut by not rolling each one individually instead I layer the tortillas in between the filling. Add your favorite toppings like avocado, sour cream and salsa and you’re set for a delicious dinner.
Easy Black Bean & Rice Enchiladas
These unrolled enchiladas are instead layeres of tortillas with melted cheese, black beans, rice and green enchilada sauce.
Ingredients
- 2 cans of Black Beans, drained & rinsed
- 1 28oz can of Green Chili Enchilada Sauce
- 18 Corn Tortillas
- 2-3 Cups Monterey Jack Cheese, grated
- 2 Cups of Brown Rice, Cooked
- 1 4 oz. can Ortega Green Chiles
- *optional 2 cups of cooked shredded chicken
optional garnishes:
- avocado, sour cream, fresh cilantro, green onions, lime, salsa
Instructions
1. Prepare Rice as directed on package. When finished, fluff with a fork. Add can of Ortega chiles and stir to combine. Set aside.
2. Pour beans into a large bowl.
3. Add 1/2 cup of enchilada sauce and stir to combine. (If using chicken, add to the bowl as well)
4. Spray a 9x13 glass baking dish with non stick spray. Next, pour about 1/2 cup of the enchilada sauce to coat the bottom of the dish.
5. Layer 6 tortillas on top of sauce.
6. Add 1/2 of beans on top of tortillas
7. Add 1/2 of rice on top of beans.
8. Add 1/3 of grated cheese.
9. Repeat one more layer.
10. Last layer is Tortillas, Sauce, finish with cheese.

Bake at 375 degrees uncovered for 30 minutes. If you can, let it rest for 10 minutes after it comes out of the oven to allow it to set a bit before serving.
Serve warm and top each piece with optional sour cream, avocado, fresh cilantro, green onions or salsa.
