Easy chicken caesar wraps are on constant rotation at my house. Both my girls love a classic caesar salad so it only made sense to stuff it all into a soft flour tortilla and serve it as a wrap for lunch one day. I take seasoned chicken breast, crisp romaine lettuce topped with creamy caesar dressing, and shaved parmesan cheese. I also add avocado and sweet grape tomatoes, then wrap it all up in large tortillas. The recipe is so simple and comes together really quickly you could have it for lunch or dinner and be satisfied.
Here’s what you need to make an easy chicken caesar wrap:
Chicken– One chicken breast. The recipe calls for 1 chicken breast and I divide it to make two wraps. You can increase the amount of chicken if you want. Any kind of chicken will work. Grilled chicken, baked or prepared on the stove-top. Store-bought rotisserie chicken, leftover chicken, and even frozen chicken tenders.
Tomatoes– 1/4 cup grape tomatoes cut in half. Cherry tomatoes can also be used or even just sliced Roma tomatoes.
Romaine Lettuce– 2 cups of romaine lettuce, shredded or thinly chopped. Any classic chicken ceaesar salad recipe calls for hearts of romaine. Which is what I prefer because there is nothing like crunchy romaine lettuce. However, you could use iceberg lettuce in a pinch if that’s all you had.
Avocado– 1 small avocado. Trader Joe’s often carries “tiny” avocados that I find work perfect in this recipe.
Caesar Salad Dressing– 1/2 cup. I recommend trying my homemade caesar dressing which you can find the recipe here! Or use your favorite store-bought dressing.
Parmesan Cheese– 1/2 cup thinly shaved parmesan cheese. Use the side of your box grater to get wide thin slices. I sometimes use store-bought for convenience. They carry it at Ralph’s and Trader Joe’s. You can also just use grated parmesan cheese.
Tortillas-Two large flour “burrito-size tortillas.” You could try whole wheat tortillas or even lavash bread which can be found at Trader Joe’s or your local grocery store.
Seasonings– 1 tablespoon of Italian seasoning. (store-bought). If you want to make your own you’ll need: 1 tsp dried oregano, 1/2 tsp dried thyme, 1/2 tsp dried basil, 1/2 tsp dried rosemary, 1/2 tsp dried parsley, and 1/2 tsp garlic powder. Mix together in a small bowl. There will probably be extra seasoning, don’t feel the need to use it all on one chicken breast.
How to make a chicken caesar salad wrap:
Cook the chicken on the grill
Begin by preparing the chicken. If you are using store-bought or leftover chicken this step will be quick. Take 1 breast of chicken and pat it dry with a paper towel. I find that the chicken cooks better if it is not wet. Season the chicken all over with Italian seasoning. Be sure to get both sides.
Be sure to pre-heat the grill before you place the chicken down. Cook for about 5 minutes on each side until golden brown and cooked all the way through. Time varies depending on thickness of chicken and temperature of the grill. Carefully slice into the center and make sure there is no pink inside. Let cool slightly before cutting into bite-sized pieces.
Cook the chicken on the stove-top
After you have patted the chicken dry with a paper towel and have seasoned the chicken all over. Cut the chicken into bite-sized pieces. Warm a large skillet and drizzle with about 1 tablespoon of olive oil. Once the oil is glistening carefully add the chicken in a single layer and cook over medium heat. Stir occasionally until lightly browned, about 4-6 minutes. Remove from the pan to a plate and let cool slightly.
Prepare the homemade dressing- if using
Here is the link to my homemade caesar dressing recipe. I will also include it on the recipe card below. Otherwise feel free to use your favorite store-bought kind.
Prep the ingredients
While the chicken is cooking, let’s prep the rest of the stuff needed for the wrap. Wash the lettuce before chopping it. I like to thinly shred/slice the lettuce. Add the lettuce to a medium bowl. Wash and slice the tomatoes in half. Add them to the bowl with the lettuce. Add 1-2 tablespoons of the dressing to the lettuce and tomatoes. (If you are making this for later I would skip the dressing and bring a side to dip the wrap in.) Toss to evenly coat. Slice the avocado into thin slices and set aside. Grate the parmesan cheese and set aside.
Assemble the wrap
Lay a tortilla on a flat surface. Scoop half the lettuce and tomato mixture onto the center of the tortilla. Spread it out to me more like a long rectangle than a circle. Imagine a line being drawn down the center of the tortilla. Place the mixture down the center line. Add 1/2 the cooled chicken to the top of the lettuce. Drizzle with more dressing if desired. Be careful not to over dress because it will get soggy. Place half of the sliced avocado on top of the chicken and then top with half the cheese. Repeat with second tortilla.
Fold it up
Fold in each sides of the tortilla. The top and bottom where the lettuce mixture is. Then roll the tortilla up tightly to close. Cut in half if desired. Serve with more dressing on the side.
This delicious chicken caesar wrap recipe is perfect for a quick lunch or great if you like to meal prep in advance. I think it’s an easy meal and the best part is that everyone will like it! Serve it with fresh fruit on the side or your favorite potato chips.
