Easy Italian ricotta toast recipe is my twist on avocado toast. I love avocado toast, but not every day, which is what I was doing. Once I got a little sick of avocado toast, I tried cottage cheese on toast with sliced apples and a drizzle of honey and that was delicious.
Now I’ve created this Italian ricotta toast. Sourdough bread is toasted and spread with creamy ricotta cheese then topped with seasoned sweet cherry tomatoes, fresh basil, and vinaigrette. I don’t always have ricotta so often I make this with cottage cheese. Both are delicious and I think you’ll love it!
Here’s what you need to make Italian Ricotta Toast:
Toasted Bread– Any type of bread will work, I prefer sourdough, but a thick slice of Italian bread would be great. Even a fresh baguette sliced down the middle would be good. You could also substitute your favorite gluten-free bread as well.
Ricotta Cheese– 1/4-1/2 cup Whole milk ricotta cheese. Vegan ricotta can also be substituted.
Tomatoes– 1/4 cup of cherry tomatoes or grape tomatoes, quartered.
Vinaigrette– 1 tsp- 1 tbsp Olive oil, splash Red wine vinegar, a dash of Oregano, a dash of Garlic powder, a pinch of kosher Salt, a pinch of black Pepper
Fresh Basil– 1 tbsp fresh chopped basil. If you don’t have basil that is ok, I just love it and always add it when I have it. It adds brightness to the tomatoes.
*Optional topping– Balsamic vinegar glaze to drizzle over the top. Not to be mistaken for balsamic vinegar. A glaze has a much thicker consistency.
How to make my easy Italian ricotta toast recipe:
First, toast your bread of choice until golden brown. While the bread is toasting, cut the tomatoes into quarters and add them to a small bowl. To the bowl add olive oil, red wine vinegar, oregano, garlic powder, salt, and pepper. If using fresh basil add it here. Stir mixture to combine and evenly coat the tomatoes. On the recipe card, I do not give exact measurements for the spices used in this vinaigrette. The reason is that it’s really just a “dash” of each one. If you must measure then I would go with the smallest 1/8 tsp or 1/4 tsp.
Let’s prepare the toast!
After the toast has cooled slightly, spread the ricotta cheese over the top. The amount of cheese you use will depend on how big your piece of toast is. Next, add tomatoes on top of the cheese, drizzle any remaining liquid left in the bowl over the top of the tomatoes. You can finish it with a little bit of flaky salt if you want or a drizzle of balsamic vinegar glaze.
This toast is made with simple ingredients like many Italian dishes. It has the perfect balance of sweetness from the tomatoes, tangy from the vinaigrette, crunch from the toast, and creamy texture from the ricotta.
It’s an easy recipe perfect for breakfast, a quick lunch, or even a snack. This is a savory toast, but you can easily make a sweet ricotta toast by adding some fresh berries, a drizzle of honey, and some fresh mint to top it off. I can’t wait for you to try this. Easy Italian Ricotta Toast Recipe

Ingredients
- 1 large slice of sourdough bread, toasted
- 1/4 cup-1/2 cup Whole Milk Ricotta Cheese or cottage cheese
- 1/4 cup of cherry or grape tomatoes, quartered. mixed with:
- 1 tsp- 1 tbsp Olive oil
- Splash Red wine vinegar
- Dash Oregano
- Dash Garlic powder
- Pinch Salt
- Pinch black Pepper
- *option* 1 tbsp fresh basil chopped added to tomato mixture
Instructions
- Toast sourdough until golden brown
- While bread is toasting cut tomatoes and add them to a small bowl.
- To the tomatoes add olive oil, red wine vinegar, oregano, garlic powder, salt, and pepper. If using fresh basil add it here. Stir mixture to combine and evenly coat the tomatoes.
- Remove bread from toaster and spread cheese across the top. Depending on how big your slice of bread is will determine how much cheese fits on top.
- Add tomatoes on top of the cheese, drizzle any remaining liquid left in the bowl over the top of the tomatoes.
Notes
- The amount of ricotta cheese needed will depend on how big your slice of bread is.
- Cottage cheese can be used in place of the ricotta cheese.
- Thinly sliced red onion adds a lot of flavor, plus great crunch
