If you have ever struggled with cooking fish, then this is the recipe for you. Using parchment paper or aluminum foil you place the fish on top of assorted vegetables and top it with herb butter, lemon and garlic and wrap up the fish and bake it for about 12-15 minutes and that’s it! It is the easiest method I have ever tried and the fish comes out perfect every time. So don’t be scared to cook fish, try this method and you’ll see making fish packets is the way to go.
Fish Packets
Ever struggle with cooking fish? Not sure how long to cook it? This is the recipe for you! Fish packets are the easiest sure proof method to cook fish perfectly every time.
Ingredients
- 4 Pieces of Fish (About 6 oz. each) Any kind of fish will work. (Salmon, Tilapia, Halibut, Cod, Swordfish)
- 1-2 Lemons thinly sliced
- 2-4 Cloves of Garlic Minced
- Green Beans trimmed (about 1/2 cup per packet) *
- Olive Oil
- 1 tsp Salt
- 1 tsp Pepper
- 1 tsp Dried Oregano
- 4 tsp Herb Butter (Trader Joe’s makes a good one.). You can also make your own with soften butter and minced herbs of your choosing
Other Veggie options:
- Asparagus, Bell Peppers & Onion
- Zucchini & Corn
- Mushrooms & Shallots
- Spinach & Tomato
- Asparagus, Tomato & onion
- Broccoli
- Olives, Capers & Tomato
Instructions
1. Preheat Oven to 350 degrees
2. Lay out 4 pieces of parchment paper or aluminum foil.
3. Assemble packets.
4. First lay a piece of parchment paper out. Fold in half.
5. Next place veggies along side of crease in the center of paper.
6. Drizzle Olive Oil over veggies.
7. Sprinkle a little fresh garlic over veggies.
8. Next, season veggies with salt, pepper & oregano.
9. Place a Lemon slice on top of veggies.
10. Lay piece of fish on top of lemon and veggies.
11. Drizzle olive oil on top of fish.
12. Season fish with oregano, salt & pepper.
13. Top fish with herb butter and lemon slice.
14. Fold up paper making sure to seal it up.
15. Place all packets on a baking sheet.
16. Bake in the oven for 12-15 minutes until fish is cooked through and flakes easily with a fork.
Notes
- There is no exact measurement for these fish packets. If you want more veggies then add more. If you want to experiment with other spices and seasonings go for it. I'm really just showing you the method to cook fish. What you put in your fish packet is really up to you. When selecting vegetables, keep in mind the cooking time. Potatoes I have found do not cook fast enough to put in the packet. You could try slicing potatoes thinly and try it that way, but I haven't tested it so I'm not sure how long they would take. If I want potato for a side dish I usually just cook them separtatly.
- You can substiute regular butter for the herb butter. Herb butter is really easy to make. Softern 1/2 stick of butter and add fresh minced herbs and stir to combine.
- You can use parchment paper or aluminum foil, either works fine!
