This giant quesadilla is filled with ooey-goey melted cheese, shredded chicken, roasted corn, green chiles and salsa. It will definitely be a show stopper when serving to a crowd or even just your family.
Everyone loves a quesadilla, but it’s hard to feed a crowd using the classic stovetop method. Using a sheet pan I fill large tortillas with all the good stuff and bake it and in just 25 minutes its ready to serve. I like to top mine with guacamole, sour cream and a squeeze of fresh lime juice. What will you put in your quesadilla?
Sheet Pan Quesadilla
Stuffed with melted cheese, chicken, roasted corn and chiles this giant sheet pan quesadilla is sure to be a crowd pleaser.
Ingredients
- 8 Lg flour tortillas (burrito size)
- 4 cups cheddar cheese
- 2 cups shredded cooked chicken
- 1 cup roasted corn, drained
- 1 4 oz. can diced Ortega chiles, drained
- 1/2 cup salsa
- 4 tbsp melted butter for brushing pan and top of tortillas
Instructions
- Preheat Oven to 450 degrees
1. Brush melted butter on cookie sheet.
2. Lay 7 tortillas on cookie sheet like so: Lay 2 tortillas on each long side of cookie sheet with half hanging off (so you can fold in later). One on each short end of the cookie sheet with half hanging off (so you can fold in later). 1 tortillas in the middle.
3. Begin by sprinkling 1/2 of cheese out on the bottom of tortillas
4. Add chicken, making sure its evenly distributed
5. Add Ortega chiles and corn
6. Spoon salsa all over.
7. Top with remaining cheese
8. Time to fold up tortillas. Close up sides and top with 1 tortilla. Brush top with melted butter.
9. Place another cookie sheet on top of tortillas and gently, but firmly press down.
10. Bake at 450 degrees for 20-25 minutes until tortillas are crispy and cheese is melted and hot
11. Using a pizza cutter or sharp knife cut into pieces.
12. Top with your favorite garnishes like Sour cream, Salsa, Avocado or guacamole, Lime, Green onion or jalapeños
