Think Brussels sprouts are boring? Think again! This Shredded Brussels Sprouts Salad is anything but ordinary—it’s a flavor-packed party in a bowl. We’re talking crispy bacon, crunchy apples, creamy avocado, sharp white cheddar, and a zingy honey mustard vinaigrette that brings it all together. It’s fresh, cozy, a little unexpected, and totally irresistible. Salad has never been this fun (or this crave-worthy)! I catch myself standing over the bowl, fork in hand, just going back for ‘one more bite’… over and over again!

There are only a few ingredients needed to make this salad, and I’ll offer a couple of shortcuts that cut down on prep time. I think this is a perfect salad to have any time of the year, but it would be a great addition to any holiday meal in the spring or fall.
Ingredients for Shredded Brussels Sprouts Salad:

- Shredded Brussels Sprouts- 1 Bag of Shredded Brussels Sprouts. I like to buy the pre-shredded Brussels sprouts from Trader Joe’s. You also can buy whole sprouts and cut them into thin slices with a sharp knife or use a food processor with a shredding blade.
- Bacon- 6 Slices of cooked bacon, crumbled. Cook the bacon until crisp. I also like to use the pre-cooked bacon. (NOT bacon bits). You can find the pre-cooked bacon right next to the uncooked bacon in the meat department. Trader Joe’s has their own brand or I like Oscar-Meyer. If using pre-cooked it still needs to be crisped up in the pan before adding it to the salad, but it only takes a few minutes and a lot less mess.
- Apple-1 large Apple, chopped or cubed into small bite-size pieces. Any kind of apple will work in this recipe. I love a tart Granny Smith or Honeycrisp apple.
- White Cheddar Cheese- 1/2 cup White cheddar cheese, grated. If you can’t find white cheddar, use sharp cheddar as a substitution. Other cheese to try would be goat cheese, feta cheese, or shaved parmesan cheese.
- Avocado- 1 large ripe Avocado, peeled and cubed
Ingredients for Honey Mustard Vinaigrette:
- Dijon Mustard- 2 tablespoons of dijon mustard
- Apple Cider Vinegar- 2 tablespoons of apple cider vinegar
- Honey- 2 tablespoons of honey, or for a little sweetness, try maple syrup. Both taste good!
- Garlic Powder- 1/2 teaspoon garlic powder
- Salt- 1/4 teaspoon salt
- Black Pepper- 1/4 teaspoon black pepper
- Extra Virgin Olive Oil- 1/4 cup of extra virgin olive oil. You can also use avocado oil too.
Different ways to shred Brussels sprouts:
option #1- Knife
Use a sharp chef’s knife and thinly slice whole Brussels sprouts. I find that it’s easier if you slice the sprout in half, place the flat side down on the cutting board, and then slice as thin as you can.
option #2- Food Processor
Place the slicing blade/attachment in and add the whole sprouts to the food processor. Process until shredded into thin strips. If your knife skills are not stellar, this could be the option for you!
option #3- Mandoline Slicer
Please be careful if you choose this option. Mondoline’s are notorious for accidents. This is my least favorite way to slice the Brussels sprouts, but that’s only because I don’t love using this kitchen tool. It totally works, and if you use a mandoline, then, by all means, slice away!
How to Make Shredded Brussels Sprouts Salad
Step 1: Cook the Bacon
In a skillet over medium heat, cook the bacon until crispy. Transfer to a paper towel-lined plate and let it cool. Once cooled, crumble it and set aside.

Step 2: Make the Honey Mustard Vinaigrette
While the bacon is cooking, whisk together all the vinaigrette ingredients except the olive oil in a small bowl. Slowly drizzle in the olive oil while whisking until the dressing is fully combined and smooth. Set aside.
Step 3: Prep the Salad Ingredients
Thinly slice or shred the Brussels sprouts. Cut the apple and avocado into bite-sized pieces. Grate the white cheddar cheese and crumble the cooled bacon.

Step 4: Assemble the Salad
In a large bowl, combine the shredded Brussels sprouts, apple, avocado, cheddar, and bacon. Pour the vinaigrette over the top and toss gently to coat everything evenly. Taste and adjust seasoning as needed. Sometimes I need to add a pinch of salt.

Step 5: Serve and Enjoy!
Serve immediately and enjoy every cozy, flavor-packed bite. (Pro tip: leftovers make a great lunch the next day! Store in an airtight container and enjoy)

- Cook the bacon and set aside until ready to use.
- While the bacon is cooking make the vinaigrette. Add all the ingredients except the olive oil to a small bowl. Combine with a whisk or fork. Add the oil while whisking to fully combine. Set aside until ready to toss the salad.
- Prep all the ingredients. Cut apple and avocado, crumble bacon, and grate the cheese.
- To a medium-sized bowl, add all of the ingredients. Toss with the dressing and serve.
