Halibut is my favorite kind of fish to eat and order out. Its a white flaky fish and it’s got a very mild taste. In this recipe I’ve rubbed it with some pretty flavorful spices and topped it with my fresh pineapple-mango salsa. The rub is not spicy its just got a lot of flavor so don’t be scared- its not hot. The salsa adds a light freshness to the dish that I think is perfect. Not feeling the salsa, leave it off, but I guarantee it takes this halibut to the next level. Like my husband always says, “this is restaurant quality!”
Spice-Rubbed Roasted Halibut topped with Pineapple-Mango Salsa
The spice rub gives the halibut a ton of flavor and couldn't be easier. Topped with my pineapple-mango salsa and it is truly a restaurant quality dish.
Ingredients
- 4 Halibut filets
- Olive Oil to coat fish
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3/4 tsp cumin
- 3/4 tsp oregano
- 1/2 tsp chili powder
- 1/2 tsp paprika
- 1/2 tsp garlic powder
Pineapple-Mango Salsa with Avocado
- 1/2 cup pineapple, small dice
- 1/2 cup mango, small dice
- 1 tbsp red onion, finely diced
- 1 tbsp jalapeno, finely diced
- 1 avocado, small dice
- 1 tbsp fresh cilantro, minced
- Juice of 1 lime
- 1/4 tsp salt
Instructions
1. Preheat oven to 400 degrees. Line a baking sheet with parchment paper.
2. Combine all spices in a small bowl. Stir to combine.
3. Rub olive oil all over the fish
4. Sprinkle spices over fish rubbing it all over fish making sure to get it on all sides of fish.
5. Bake 15-20 minutes until fish flakes easily with a fork.
6. Plate fish and top with pineapple salsa and enjoy!
Directions for the salsa:
Finely dice all the ingredients and add to a bowl. Gently stir to combine. Spoon over fish and serve.
Notes
If possible try and use fresh fruit for the salsa. Next best choice would be to use frozen fruit.
