There is nothing better on a hot summer day than a frozen treat! We always have something cold in the freezer, but sometimes the store bought stuff is just full of added sugar so I thought I would come up with a treat I felt good about giving my kids. So the watermelon slushie was born!
Watermelon is by far the most popular fruit to eat in my house. My kids can eat their very own mini watermelon in one sitting. So I decided to use watermelon when creating this treat. I start by cutting up a watermelon into cubes, preferable the seedless kind and freezing most of it, reserving just a 1/2 cup in the fridge. I add some strawberries and honey for sweetness and fresh lemon juice for some added tartness and that’s it. Blend until creamy and smooth. Can be eaten with a spoon or straw. Enjoy!
Watermelon Slushie
Cold, creamy and delicious! The perfect summertime treat.
Ingredients
- 2 1/2 cups frozen watermelon, cubed
- 1/2 cup fresh watermelon, cubed
- 6 fresh strawberries
- 1 lemon, juiced about 1/4 cup
- 1 tbsp honey
Instructions
- Add all ingredients to a blender and blend on high until creamy and smooth. Use a rubber spatula or wooden spoon to scrape down the sides as needed to make sure its all incorporated together.
- Serve immediately and enjoy!
Notes
- The watermelon will take about 4-6 hours to freeze. I like to buy 2 mini watermelons at a time and cut one up for the freezer and one for us to eat right away. I usually cut the watermelon the night before and store it in a ziploc bag and throw it in the freezer.
- Don't forget to reserve 1/2 cup of watermelon that is not frozen. This helps the slushie blend up without adding additonal liquid.
